Everyone loves a bit of fried rice, whether it’s chicken, pork, vegetable, tofu or of the spicy variety, this dish is a favourite standard got to meal here on Koh Phangan.
In Thai language you pronounce fried rice as ‘Khao Pat’, for all you veggies out there if you say ‘Khao Pat Paak’ that means it will be fried rice vegetable.
Mu is for pork fried rice, kai for chicken and kung is shrimp.
Fried rice will differ from each Thai region and also every different restaurant, they all have their own recipe. It apparently differs from Chinese fried rice because of the actual type of rice used.
The main ingredients are egg, onions, garlic, tomatoes, soy sauce, sugar and fish sauce which are stir-fried together with the other ingredients. More than likely it will be served with crunchy cucumber and possibly herbs and the great thing about fried rice is that you can add as much or little chilli as you like plus any extra soy, fish sauce or even chilli vinegar!

If you want to make your own fried rice then let us share with you a super useful kind of secret… Use cold rice! Make a batch of rice, let it cool and keep in the fridge. Fry up all your ingredients and then add the cold rice, this helps stop making thick and sludgy and keeps it seperate and fresh!
