What has brought you to Koh Phangan?
The work for Infinity really, I met the boss in Paris and had a few interviews before coming here.

But I also wanted to leave France.

What sounded good about the offer?

The project sounded very interesting for me as I am young in terms of a chef and Infinity is a big business so it is a good challenge.

I had heard that Koh Phangan was such a beautiful island and that it was relaxed here.

It is a different way of life with lovely landscapes and Thai food.

What is your role at Infinity Beach Club?
I am the head chef at Zen restaurant so I create the menus which are a mix between french cuisine and asian.

I organise the daily menu if there is a dish of the day and also do the snack menu.

I start in the morning and finish at night but I like my job, if I didn’t like my job then I wouldn’t be able to do that, it would be impossible.

Can you describe the food at Zen for us...

French style and asian food mixed together, for example the pork tenderloin is in a pineapple sauce with local mushrooms.

Where do you get inspiration for food?
I plan in the kitchen and try out different recipes and I use all of my own experience.

I have met a lot of famous French chefs and tried their food which has given me inspiration and have been lucky enough to have a very nice education.

What is special about infinity beach club?

The first thing is all of the products are fresh, it’s a pleasure to work with fresh products.

It is special here as I can share all of my talent with the Thai chef at Infinity’s other restaurant Big Fish and it’s a good mix of chef ability between us.

It really is a pleasure to work together and share our talents.

Do you enjoy Infinity’s parties?
It is very pleasant to work in a place with a good atmosphere, good music and a festival vibe, it’s a different way of working for a chef.

What have you been enjoying about the island in your free time?

When I have a day off I like to go to the market, I don’t like to stay at home.

I go to the temples and enjoy discovering the culture. Sometimes I like to go to the pier to catch fish as well!

Do you see yourself staying here?
For the moment, I would like to stay to manage the restaurant and sometimes go other places and I want to discover the rest of the world.
