Fun and Delicious Ways to Eat More Greens on Phangan

Greens contain more nutrients per bite than any other garden crop but sometimes they can seem rather boring. So what can we do to make sure we are excited to eat these health and energy boosting greens? By having a variety of fun ways to eat them!

 

Green Crusts

Making a pan of baked macaroni? Or perhaps a nice casserole? Try lining the baking dish with fresh garden greens! You can double the vitamins in the dish by doing so. To prevent the greens from sticking to the dish, oil it first. Then, lay down a layer of either arugula, beet greens, chard, or spinach. For thick chard, collard, or kale leaves you may need to split the stem down the middle. Next, top it off with any quiche or casserole-type filing you choose. As far as for quiche crust goes...this is a much healthier and gluten-free option!

Cheesy or Creamy Greens

Steam the greens (kale, spinach, or, chard are ideal) and then add cream or chunks of melted cream cheese, or any cheese for that matter. Squeeze out any excess water beforehand. Lastly, try adding some french onion, or fresh chopped garlic...or even some crunchy fried onion or garlic bits on top. 

Sauce Them!

Make Saag or other sauces with the greens. Saag is an indian sauce made from Spinach but it can also be made with chard, beet greens or turnip greens. This delicious sauce is usually served with paneer cheese, chunked, or potatoes and rice. It’s really easy to make too! Just stir fry the greens with butter until soft, then push to the side. Next, fry a couple cloves of chopped garlic and one tablespoon chopped ginger. Next mix in 1 teaspoon cumin, turmeric, coriander, and salt. Once thats nice and toasty mix all of it together and stir fry for a few more minutes until all the ingredients are well blended together. Remove and transfer to a food processor for liquefaction. 

Freeze It, Soup It, Stew It

Greens can be steamed and frozen ready to be tossed into any soup for a quick green boost!
