The King of Hummus is located in the food market in Thong Sala, the hub of all things edible! Leo Beer took us for a trip down to get out Hummus fix from 'The King of Hummus!'.

Owner and Phanganist friend Shani has lived on Koh Phangan for many years now so we had a quick chat with The King of Hummus himself!

So how did you learn to cook Shani?
It was as a kid in the kibbutz (a type of community) of Israel, the food was no good so I taught myself!

And why hummus in particular?
Everyone said my hummus was very good so this is the reason why and if you enjoy to make something then everyone else will enjoy it too!

Hummus is a medicine, it makes you healthy.

Everything is homemade at King of Hummus and it is all vegan, the pita bread is soft and delicious and maybe we’re biased but this really is the best hummus we’ve tasted.

Shani tells us the process for making the hummus -

‘The chickpeas are soaked for twelve hours in water then it’s six hours of cooking so that’s already eighteen hours, the total process is about twenty four hours. We add olive oil, tahini which is our own, water, lemon and garlic.

So why did you choose to be at the food market?
It’s the best position on the island for food, here you can find all kinds of food not just Thai.

What we serve is enough for the wagon at the moment and I like to offer take out but we keep selling out!

We make the hummus fresh every day as I don’t want to make big batches that we have to throw out.

What’s special about hummus?
Hummus is fragile as the bacteria process is quick, it is powerful and healthy. Heavy but light and full of energy.

I didn’t know before but it seems everyone likes hummus! Most people stop to try it and then some buy, I feed many people in my life!

And what is your life philosophy?
Enjoy life as much as you can while you can!
